Prep time: 10 minutes Cook time: 25-30 minutes Serves: 4
Ghee – 2 tablespoons.
Mustard seeds – 1/2 tea spoon.
Cumin seeds – 1/2 tea spoon.
Green chillies(chopped) – 1 number.
Curry leaves – 1 spring.
Chilli powder- 1 teaspoon
Turmeric -1 teaspoon
Onions(chopped) – 1 tablespoon.
Ginger(chopped) – 1 tea spoon.
Garlic-1 clove chopped
Carrot(chopped) – 1 small carrot
French Beans- 2 tablespoon chopped
Potatoe-1 medium diced potato
Salt – to taste
Quinoa – 1 cup.
Water or vegetable stock- 1 cup.
Spinach- 1/4 bunch.
Lime juice – 1 tea spoon.
Tomato(chopped) – 1 chopped and diced
Heat ghee in a pan and add mustard seeds, cumin seeds, green chillies, curry leaves, onions, ginger ,garlic and saute it.
Add turmeric and chilli powder
Then add tomatoes and saute for 3-5 min
Add carrots ,potatoe,little salt and ½ cup water or stock- let cook for 8-10 min
Wash the quinoa then soak it for 5 -20 minutes and strain the water.
To the above pan add quinoa,1/2 cup water or stock , salt and mix thoroughly then place the lid and cook it on slow flame for 10 minutes.
Add spinach, French beans , lime juice, coriander leaves-cook for 3 minutes
Garnish with spinach leaves
