Quinoa Bread


  • 2 cups of quinoa flour
  • 1 cup of oat flour, or spelt flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 2 cups of any type of non dairy milk
  • 3 tablespoons of coconut butter at room temperature
  • 1 tablespoon of any type of vinegar
  • 1 tablespoon of maple syrup or raw honey



  1. Preheat oven at 400 degrees Fahrenheit.
  2. Line an 8” by 5” loaf tin with parchment paper.
  3. To make the quinoa flour, blend whole quinoa grains in a high speed blender or food processor for a few minutes until it forms into a flour.
  4. Blend the quick oats the also form a flour.
  5. Add this to the mixing bowl, along with the flour, baking soda, baking powder, and salt. Mix well.
  6. Add the coconut butter, and stir into small pieces.
  7. In another bowl, whisk the milk, maple syrup or honey, and vinegar.
  8. Add this to the bowl with the dry ingredients.
  9. Transfer all of this to the prepared loaf tin.
  10. Level it and sprinkle with sesame seeds.
  11. Bake for 60 minutes, covered loosely with parchment paper for the first 30 minutes to prevent the top from burning.
  12. Remove from the oven, and let cool for an hour.
  13. Remove from the tin. Cut the bread into slices and serve with avocado, feta, spinach, roasted tomatoes, and kale chips.
